2 pounds tomatoes
salt
freshly ground pepper
1 cup basil leaves, torn
1 cup Elki's Black Olive Tapenade
Core tomatoes, cut them in two horizontally and shake out seeds squeezing gently then chop into even, bite size pieces.
Toss with Elki's Black Olive Tapenade.
Add salt and some pepper if necessary.
Stir in basil leaves.
20 minutes preparation time.
Serves 4.
