Thai Peanut Chicken Salad

ELKI Customer

 6 cups of romaine lettuce
2 cups shredded, skinless, boneless rotisserie chicken breast
2 cups fresh beam sprouts
1 cup shredded carrots
3/4 cup sliced celery
1 tblsp fresh lime juice
2 tblsp unsalted dry-roasted peanuts, chopped
1/2 cup Elki's Thai Peanut Sauce

Combine first six ingredients in a large bowl.
Pour Elki's Thai Peanut Sauce over lettuce mixture and mix.
Sprinkle with peanuts and serve with fresh lime wedges.
