Swedish Almond Bars

Flour Pot Kitchen

1 cup white granulated sugar
1 cup white flour
½ cup butter, softened
2 eggs, beaten
1 teaspoon almond extract
1/4 cup slivered almonds
½ cup ELKI Apricot Scandinavian Delights
Powdered sugar for dusting
Preheat oven to 350-degrees F.
In a large stand mixer, blend together sugar and flour, adding the the butter until incorporated.  Mix the eggs and almond flavoring together, then stir into the sugar, flour and butter mixture.The mixture will be somewhat like a thick cake batter. Do not over mix.
Spread evenly in a lightly buttered tart pan. Sprinkle slivered almonds on top. Bake at 350° for about 20-25 minutes until edges are light golden brown. Bars are done when toothpick inserted comes out clean.  Be careful to not over bake. Drizzle ELKI Apricot Preserves and dust with powdered sugar. Cut into wedges while still slightly warm.
