Blueberry Vinaigrette

Flour Pot Kitchen


1 cup chopped pecans or walnuts

½ white balsalmic vinegar

1/3 cup Elki Blueberry Preserves

1/3 cup Olive Oil

10 ounces tender spring greens

1 cup fresh blueberries

1 sliced Asian Pear

1 half small red onion, sliced

1 cup crumbled blue cheese or feta

Heat pecans or walnuts in a small skillet over medium-high heat, stirring constantly, 5 minutes or until toasted and fragrant.

In a blender or food processor, add the balsamic vinegar, olive oil, ELKI blueberry preserves and salt & freshly ground pepper to taste. Combine walnuts, fresh spring greens, and next 3 ingredients in a large bowl.

Drizzle with desired amount of vinaigrette, and toss to combine. Serve immediately with remaining vinaigrette.
